Canada Day Cake, or, My far too many hours playing on Pinterest pays off


So this was my desert contribution to my pal Kelly's Canada Day BBQ.  Many friends on Facebook have asked what it is, so here you go!

The Cake:
1 box of Angel Food cake mix
1 can of crushed pineapple.

That's it.  Just mix the 2 together and bake according to the instructions on the cake mix box.  Normally I don't go for anything in a box or can  - the 4 Food Groups are NOT things from a box, things from a can, things from a bag and things from the freezer!!!  But in this case I made an exception because it's a famous recipe and frankly, I had other recipes on the go and I was scared I'd run out of time if I tried doing it from scratch.  Plus the juice from the can of pineapple is a crucial part of this recipe.  I heard about this recipe many years ago well before the days of Pinterest.  Naturally, I found it on line so I could pin it, lol. 

I found another pin about using coconut milk rather than whipped cream.  I LOVE coconut!  So the white topping you see in the picture is not whipped cream or icing.  Coconut combined with the pineapple in the cake...  fab-u-lous!  I also sprinkled a little bit of shredded coconut on the non-strawberry covered part of the cake.  Why did I not sprinkle shredded coconut all over the cake before putting the strawberries on, you ask?  Cuz I totally forgot I had bought shredded coconut - Oops!

I used an egg slicer to cut the strawberries, and then just placed them on top to make the flag.  I'm must say, I'm rather impressed with how the art work turned out.  Drawing with strawberry slices isn't a precise medium, but if you hold the picture far away and squint and let your vision go out of focus, it looks exactly like our Canadian flag, eh!!!

I've now done nearly 2 dozen things I've pinned, so I have made a board just for those things.  On it you'll find the instructions for the cake and coconut "whipped" topping.  It also has the refreshing watermelon "Cool Down Summer Salad" which I also made today, and was really, really good.  I'm kicking myself because I forgot to take a picture of it.  I even had a really pretty serving dish for it.  Oh well, I'm sure I'll make it again this summer.

The Heavy Metal Workout (v2.0)

Just over a year ago my friend Kris asked me if I'd do a fitness class at the local Relay for Life event.  Just a little something to break up the actually running & walking all night.  In discussing what to do that would appeal to a varied crowd I mentioned I had an idea I had always wanted to try, but never had the chance.  And thus, The Heavy Metal Workout came to be.

The class went over so well I was asked to come back and do it again this year.  As last year it was a lot of fun and I was pleased to see how many people, especially the youngest ones, knew so many of the songs I selected.  It was my little slice of being a rock star - I even had one " fan" in front who sang along to and cheered for every song on the list!  For people who'd been walking/running the relay since supper time, they exercised and sang along at 1:30am like true troopers!!

This year my friend and piano player, Kim, was there to participate with her family.  She managed to get a pretty decent pic of me right before I started the workout. 

Notice the shirt, eh?  These colours don't run, but they do teach cardio to classic metal tunes!  As I always say, there's a fine line between pumping iron and Iron Maiden! The class format was a mix of cardio kick-box moves and some no-equipment toning.  We finished with a good stretch-out to Dio's "Holy Diver" - a song choice not lost on the rockers in this crowd.
